Fresh Corn Salad

Fresh corn, taken off the cob. About 6 cobs worth or more.
Put in simmering water for a few minutes only, drain. (optional) I like the corn just a little softer than raw.

Add:
1 bunch cilantro, chopped fine
2 tsp garlic chopped fine, 2-3 cloves
2 peppers, one red, one orange, seeded and chopped fine
3 avocados, chopped chunky
2 limes, juiced
olive oil to taste

This is a lovely fresh salad that a friend just made. We've made it twice now-and it's great the next day for lunch too. You can wash big leaves of spinach and make little rollups if you want to go fancier for a luncheon.
